Cooking Instructions
Step 1
First, prepare the clean sea spinach by cutting it into bite-sized pieces. Cut larger leaves into 4 pieces and smaller leaves into 2 pieces. This ensures the seasoning coats evenly, making it more flavorful.

Boil a generous amount of water in a pot. Once boiling, add a pinch of salt and blanch the sea spinach briefly. (Tip: Adding coarse salt while blanching helps maintain the vibrant green color of the sea spinach. Blanching without salt also yields delicious results, so choose according to your preference.)

Immediately rinse the blanched sea spinach under cold running water to quickly cool it down. This helps retain its crisp texture. (Note: Spinach contains oxalic acid, so soaking it in cold water for about 5 minutes before use is recommended.)
