Healthy Omurice with Chicken Breast and Vegetables
How to Make Omurice Using Chicken Instead of Ham for a Healthy Diet Meal
This is a healthy omurice recipe made with chicken breast. Enjoy a nutritious and delicious meal!
Ingredients- 1/2 bowl of mixed grain rice (warm)
- 2 pieces of chicken breast (approx. 100-120g)
- 2 eggs
- 1 tsp mirin (or cooking sake)
- 2 fresh shiitake mushrooms
- 1/4 onion
- 1/4 carrot
- 1/2 green bell pepper
- Pinch of salt
- Pinch of black pepper
- 2 tsp olive oil
- 1 tbsp low-sugar tomato ketchup
- 1 tsp Worcestershire sauce
- 1 tbsp minced garlic
Cooking Instructions
Step 1
First, prepare the vegetables and chicken breast for the fried rice. Wash the shiitake mushrooms, onion, carrot, and green bell pepper thoroughly and finely dice them. Finely chop the chicken breast into bite-sized pieces. If you wish to remove any gaminess from the chicken, you can marinate it with 1 tsp of mirin beforehand.
Step 2
Heat 1 tbsp of olive oil in a pan over medium heat. Add the minced chicken breast and sauté until the surface turns white and it’s mostly cooked through.
Step 3
Once the chicken is almost cooked, add the diced carrots and onions to the pan and continue to stir-fry. Cook until the carrots and onions become translucent and tender.
Step 4
When the onions are about halfway done, add the diced green bell pepper and shiitake mushrooms. Stir-fry for another 1-2 minutes until the mushrooms soften and all the vegetables are lightly cooked. Avoid overcooking if you prefer a slight crunch in your vegetables.
Step 5
When the vegetables are nearly cooked, add the minced garlic and sauté for about 30 seconds until fragrant. Season with a pinch of salt and black pepper. It’s advisable to season slightly less at this stage, as the rice will absorb flavor when mixed.
Step 6
Add the warm mixed grain rice to the pan with the cooked chicken and vegetables. Stir in 1 tsp of Worcestershire sauce and 1 tbsp of low-sugar tomato ketchup. Use a spatula to gently break up any clumps of rice and mix everything well until the rice grains are separated and slightly toasted. Be careful not to mash the rice.
Step 7
In a separate bowl, crack the 2 eggs and add 1 tsp of mirin to eliminate any eggy smell. Whisk gently with a fork to break the egg yolks and mix, but avoid over-whipping.
Step 8
Clean the same or another non-stick frying pan, add the remaining 1 tsp of olive oil, and heat over low heat. Pour the beaten egg mixture into the pan and tilt the pan to create a thin, wide omelet shape. Cook until the edges just begin to set, keeping the heat low.
Step 9
Before the egg is fully cooked, spoon the prepared fried rice onto one half of the omelet. Carefully fold the other half of the omelet over the rice, or gently slide the rice onto the omelet and fold it in half to create a half-moon shape. Place a plate over the omelet and carefully invert the pan onto the plate to unmold the omurice.
Step 10
Finally, drizzle some low-sugar tomato ketchup over the top of the omurice for a classic finish. Your delicious and healthy chicken omurice is ready to be enjoyed! Serve immediately while warm.
