Cooking Instructions

First, thoroughly wash the fresh organic tomatoes under running water. After washing, pat them completely dry with paper towels. Ensuring no moisture remains is crucial. Next, dice the tomatoes into small, bite-sized pieces. Avoid blending them in a mixer, as this will result in a puree and lose the texture of the tomatoes. Chopping them finely with a knife preserves their unique texture.

Now, it’s time to prepare the sugar that will sweeten your tomato syrup. I’ve chosen xylose sugar, which is known to help reduce blood sugar spikes. Using a healthier sugar option makes your tomato syrup even more beneficial. While regular sugar can be used, xylose sugar is recommended for those mindful of their health.

Combine the diced tomatoes with the prepared xylose sugar and lemon juice in a bowl. Use a spatula or spoon to mix well, ensuring the sugar coats the tomatoes evenly and dissolves. Stir patiently until the sugar has completely dissolved. Proper sugar dissolution prevents mold formation later and helps extract the optimal amount of juice from the tomatoes for a delicious syrup.

Sterilize a glass jar by boiling it in water or wash it thoroughly, ensuring it is completely dry before use. Transfer the sugar-coated diced tomatoes into the sterilized jar. Pour the oligosaccharide evenly over the tomatoes to add sweetness and smoothness. It’s best to pour the oligosaccharide over the tomatoes so they are fully covered, preventing them from floating to the top. If you are using honey instead, use only about half the amount of oligosaccharide. Honey is intensely sweet and has a strong flavor, so adjust the quantity carefully.

Now, let the delicious tomato syrup mature! Store the jar at room temperature for one day to allow the sugar to fully dissolve and meld with the tomatoes. If any sugar has settled at the bottom, stir well to dissolve it. After one day, refrigerate the syrup and enjoy it chilled. I love to mix my chilled tomato syrup with sparkling water for a refreshing tomato ade – it’s perfect for quenching thirst with its sweet and tangy taste! Since tomatoes are high in water content, it’s best to make smaller batches and consume them fresh rather than making a large quantity at once. Also, remember that even though it’s a syrup, leaving it at room temperature for too long can lead to mold growth, so always refrigerate it and try to consume it promptly.
