Main Ingredients- Butterbur leaves 250g
- Red chard 70g
- Coarse salt 1/2 Tbsp
- Cooked rice 1 bowl
- Yellow cheese 1 slice
- White cheese 1 slice
Ssamjang Seasoning- Tofu and tuna ssamjang, a small amount
- Sesame oil 1 Tbsp
- Toasted sesame seeds 1/2 Tbsp

Cooking Instructions
Step 1
First, let’s prepare the star ingredient: butterbur leaves. Bring a pot of water to a rolling boil and add 1/2 tablespoon of coarse salt. Carefully place the butterbur leaves into the boiling water and blanch them for just 10 seconds. Be cautious not to overcook them, as they can become mushy. Immediately transfer the blanched butterbur leaves to a bowl of cold water to stop the cooking process.
Step 2
Rinse the butterbur leaves thoroughly under cold running water. Pay special attention to the stem ends, as they can accumulate dirt or debris. Gently scrub these areas clean. After washing, arrange the leaves in a circular pattern on a colander, overlapping them slightly, and allow them to drain well.
Step 3
Now, let’s prepare the beautifully colored red chard. Red chard is characterized by its vibrant red stems. Blanch the red chard leaves in boiling water for a very short time, about 3 to 5 seconds. After blanching, rinse them under cold water, similar to the butterbur leaves. Carefully wash the stem areas, ensuring no impurities remain. Drain the leaves thoroughly.
Step 4
Lay the drained red chard leaves flat, making sure they are spread out. Place about one tablespoon of cooked rice onto the center of each leaf. Gently press down on the rice. Then, add a small amount of the prepared tofu and tuna ssamjang. Carefully wrap the leaf around the rice and ssamjang to form a neat roll.
Step 5
Let’s make ssam rice rolls with the aromatic butterbur leaves as well. Spread a drained butterbur leaf flat. Place about one tablespoon of rice in the center, followed by a small dollop of tofu and tuna ssamjang. Wrap the leaf securely around the filling to create a delicious roll. The unique aroma of butterbur combined with the rice and ssamjang will be truly delightful.
