Ingredients
  • 1/2 Kabocha Squash (for microwaving)
  • 40g Almond Flour (for a nutty flavor and texture)
  • 2 Eggs (for moisture and binding)
  • 5g Baking Powder (to make the bread fluffy)
  • 2 Tbsp Allulose (to enhance sweetness healthily)

Cooking Instructions

Step 1

Wash the kabocha squash thoroughly. Place half of it in a microwave-safe dish, cover with plastic wrap or a lid, and microwave for about 5-7 minutes until tender. Adjust the cooking time based on the size of the squash.

Step 2

Once the squash is cooked and slightly cooled, carefully peel off the skin using a knife. Scoop out the seeds. Mash the peeled squash flesh with a fork or a masher until it’s smooth and lump-free. (It’s easier to mash while it’s still warm!).

Step 3

In a bowl with the mashed kabocha squash, crack in 2 fresh eggs. Add the almond flour and baking powder. Mix well with a spatula or whisk until you have a smooth, uniform batter without lumps. Be careful not to overmix, as this can make the bread tough.

Step 4

While the kabocha is naturally sweet, add 2 tablespoons of allulose to enhance the flavor. Gently mix again to ensure the sweetness is evenly distributed throughout the batter.

Step 5

Prepare a microwave-safe container by lightly greasing the inside with olive oil or butter. This prevents the bread from sticking. Pour the prepared batter into the container and spread it evenly. (You can also line it with parchment paper).

Step 6

Place the container with the batter into the microwave and heat for about 5 minutes. Check if the bread is cooked through by inserting a skewer or toothpick; if it comes out clean, it’s done.
