Instead of the usual butter for baking, I’ve created these fragrant Earl Grey madeleines using healthier coconut oil and coconut sugar. The subtle sweetness of coconut and the deep aroma of Earl Grey tea blend beautifully, offering a healthier and more special treat. They are easy to make with simple ingredients, perfect for sharing a sweet tea time with your loved ones!

Madeleine Ingredients
  • Makes about 18 mini madeleines
  • 50g Coconut oil (recommend a neutral-flavored type, or use melted butter/grapeseed oil as an alternative)
  • 40g Coconut sugar (can be substituted with regular granulated sugar or unrefined sugar)
  • 40g Cake flour
  • 12g Almond flour
  • 1/2 tsp Baking powder
  • 1 Large egg, room temperature
  • 5g Honey
  • 1 Earl Grey tea bag (choose your preferred type)

Cooking Instructions

Step 1

First, melt the 50g of coconut oil by microwaving it for about 30 seconds to 1 minute until completely liquid. It’s best to use a coconut oil that doesn’t have a strong coconut aroma for this recipe. If you don’t have coconut oil, melted butter or grapeseed oil will also work wonderfully.

Step 2

In a large bowl, sift together the 40g of cake flour, 12g of almond flour, and 1/2 tsp of baking powder. Sifting helps create a smooth batter without lumps. Next, add the 40g of coconut sugar and whisk everything together thoroughly. If there are any lumps in the coconut sugar, sift them too for a finer texture. You can easily substitute coconut sugar with regular granulated sugar or unrefined sugar.

Step 3

Now, add the Earl Grey tea bag to the dry ingredients. Gently crush the tea bag and mix the tea leaves thoroughly into the flour mixture. This will infuse the batter with the subtle, fragrant notes of Earl Grey tea. Feel free to adjust the type or amount of tea according to your preference.

Step 4

Create a small well in the center of the dry ingredients and crack in the room-temperature egg. Lightly whisk the egg in the well before gradually incorporating the surrounding dry ingredients. Once the egg is partially mixed, slowly pour in the melted coconut oil and whisk until you achieve a smooth, cohesive batter. Finally, stir in the 5g of honey for added gloss and a touch of sweetness.

Step 5

Transfer the finished batter into a piping bag and refrigerate for at least 1 hour to rest. Chilling the batter helps the madeleines hold their shape beautifully when baked. After resting, generously grease your madeleine molds with un-melted coconut oil or butter to prevent sticking. Fill each mold about 70-80% full with the batter. Bake in a preheated oven at 180°C (350°F) for 10 to 12 minutes, or until golden brown. Insert a skewer into the center; if it comes out clean, they are perfectly baked.
