Healthy Diet Kabocha Natto Finger Food Salad

I’ve gathered my favorite ingredients to create a delicious finger food salad that’s light and healthy, perfect for anyone to enjoy! It’s designed to be a satisfying yet refreshing meal.
Main Ingredients
- 1/2 to 1/3 Kabocha squash
- 1/4 Cucumber
- 1/2 to 1/3 Apple
- 2 leaves Fresh lettuce
- 1 pack Natto (approx. 50g)
Dressing & Seasoning
- A little mayonnaise (to taste)
- Soy sauce (a small amount)
- Lemon juice (for vegan option) a little

Cooking Instructions
Step 1
1. Cut the kabocha squash into bite-sized pieces. Place it in a microwave-safe dish and microwave for about 3 minutes and 30 seconds until tender. (If using an oven or steamer, cook until the kabocha is soft.)
Step 2
2. While the kabocha cools slightly, wash and core the cucumber and apple. Finely dice them into small cubes. The finer the dice, the smoother the texture will be.
Step 3
3. Mash the microwaved kabocha squash until smooth using a fork or mashing tool. Add the finely diced apple and cucumber to the mashed kabocha and mix well to create the salad base.

4. Add mayonnaise to the salad base to your liking for a creamy texture. (For a vegan option, instead of mayonnaise, add a small amount of soy sauce and lemon juice. This combination can create a flavor profile similar to mayonnaise, mimicking its richness. Use only a very small quantity of soy sauce and lemon juice.)

5. Stir the natto well with its included sauce. Place a spoonful of the kabocha salad base onto a clean lettuce leaf, then top it with the prepared natto. Your delicious finger food salad lunchbox is now complete!
