Main Ingredients- 5 cloves garlic, minced
- 1/2 cup mixed vegetables (for stir-fry)
- 1 cup cauliflower rice
- 4-5 peeled and deveined shrimp
- 1/2 piece chicken breast, diced
- 1/2 can (approx. 200g) whole peeled tomatoes
- 1 tbsp store-bought tomato sauce
- 120ml water
- 2 tbsp shredded mozzarella cheese (or 1 cheese slice)
Cooking Instructions
Step 1
First, heat a pan over medium-low heat and add a generous amount of olive oil. Sauté the thinly sliced garlic until it becomes fragrant and lightly golden. Be careful not to burn the garlic.
Step 2
Once the garlic is fragrant, add the thawed shrimp and cook until they turn pink. Then, add the diced chicken breast and mixed vegetables, stir-frying until all ingredients are evenly cooked.
Step 3
When the ingredients are partially cooked, add the whole peeled tomatoes (crush them with your hands), 1 tablespoon of store-bought tomato sauce, and 120ml of water. Stir everything together well.
Step 4
Once the sauce begins to simmer, add the cauliflower rice. Reduce the heat to medium-low and continue to cook until the sauce thickens and the cauliflower rice softens, resembling a risotto consistency. This should take about 5-7 minutes.
Step 5
Turn off the heat. Add the 2 tablespoons of shredded mozzarella cheese (or 1 cheese slice) and stir until the cheese is melted and well combined. The cheese will add a creamy and savory touch.
Step 6
