Introducing a delightful Carrot Râpé Toast that’s perfect for your diet! This vibrant carrot preparation, known as ‘râpé,’ can also be enjoyed as a side salad or a quick pickle, making it a versatile addition to your kitchen.
Main Ingredients
- 10g Butter (approx. 1/2 Tbsp)
- 2 slices Bread
- 2 Eggs
- 4 Fresh Lettuce Leaves
- 1 Medium Carrot
- 1 Tbsp Salt
Refreshing Râpé Dressing
- 2 Tbsp Extra Virgin Olive Oil
- 1 Tbsp Whole Grain Mustard
- 1 Tbsp Allulose (or honey/sugar)
- 1 Tbsp Fresh Lemon Juice

Cooking Instructions
Step 1
Thoroughly wash the carrot. Gently secure the stem end with a fork. Using a mandoline slicer or a sharp knife, carefully julienne the carrot into thin, long strips, resembling pasta.
Step 2
Place the julienned carrots in a bowl and sprinkle with 1 Tbsp of salt. Let them sit for about 10 minutes. The salt will draw out excess moisture, resulting in a crispier texture and enhanced flavor.
Step 3
Take the salted carrots and firmly squeeze out as much liquid as possible with your hands. Removing excess water is crucial for a well-combined dressing and a non-soggy result.
Step 4
In a separate bowl, whisk together 2 Tbsp of olive oil, 1 Tbsp of whole grain mustard, 1 Tbsp of allulose (or your preferred sweetener), and 1 Tbsp of fresh lemon juice until well combined. This is your vibrant râpé dressing.
Step 5
Add the prepared dressing to the squeezed carrots and toss gently to ensure every strand is coated. Your fresh Carrot Râpé is now ready!

Melt 10g of butter in a non-stick skillet over medium heat. Toast the bread slices until golden brown on both sides. Fry the eggs to your preference – sunny-side up or over-easy work beautifully. (I used a square mold for a neat fried egg.)

Assemble your toast! Lay a piece of toasted bread down, followed by a layer of fresh lettuce leaves. Top with the fried egg, and then generously pile on the Carrot Râpé. Crown it with the second slice of toasted bread.
Step 8
Wrap the assembled toast tightly with plastic wrap. This helps hold everything together and keeps the toast neat when cutting. Once wrapped, slice the toast in half with a sharp knife for easy handling and enjoyment. Your delicious Carrot Râpé Toast is complete!
