A special healthy diet meal for my son! This recipe features tofu crisped up in the air fryer without any oil, served alongside fresh vegetables. It’s a light yet satisfying meal, perfect for those on a diet or anyone seeking a nutritious dish. While I’m not sure how long he’ll stick to it, let’s support his healthy habits with this delicious salad! Enjoy the crispy texture and fresh flavors.

Salad Ingredients

  • 200g Tofu
  • 1/4 Cucumber
  • 2 Kale leaves
  • 2 Chicory heads
  • 1/4 head Cabbage
  • 1 head Lettuce
  • 1 head Romaine lettuce

Balsamic Dressing

  • 2 Tbsp Balsamic vinegar
  • 1 Tbsp Lemon juice
  • 1 Tbsp Olive oil
  • Pinch of salt

Cooking Instructions

Step 1

First, gently pat the tofu dry with paper towels. Then, cut it into bite-sized cubes, about 2cm each.

Place the cubed tofu in the air fryer basket. Cook at 180°C (350°F) for 10 minutes. After 10 minutes, flip the tofu and cook for another 10 minutes until golden brown and slightly crispy. This method ensures a crispy exterior and a tender interior.

In a small bowl, whisk together 2 tablespoons of balsamic vinegar, 1 tablespoon of lemon juice, 1 tablespoon of olive oil, and a pinch of salt until well combined. This creates a flavorful balsamic dressing.

Wash the prepared vegetables (cucumber, kale, chicory, cabbage, lettuce, romaine lettuce) thoroughly under running water. After washing, drain them well and tear them into bite-sized pieces by hand. (You can also thinly slice or julienne the cucumber if preferred).

Keep the deliciously air-fried tofu warm and ready.

Arrange the fresh, prepared vegetables attractively in a large salad bowl or on a plate. Then, artfully place the golden-brown, air-fried tofu on top of the greens.
