Main Ingredients

  • 1 Frozen Chicken Breast (approx. 200g)
  • 1 Onion (medium size)
  • 2 Eggs
  • 2 servings Konjac Rice

Cooking Instructions

Step 1

Begin by preparing the star of this dish: the pickled onions. Wash and peel 1 medium onion, then slice it thinly into julienne strips. Thinly sliced onions will absorb the marinade better and have a more pleasant texture.

Step 1

Step 2

In a bowl, combine the sliced onions with 2.5 Tbsp soy sauce, 1 Tbsp allulose sugar, and 2 Tbsp water. Mix well and let it sit for a few minutes to allow the flavors to meld.

Step 2

Step 3

While the onions are marinating, let’s make the scrambled eggs. Crack 2 eggs into a separate bowl. Add 0.5 tsp salt and a pinch of black pepper, if desired.

Step 3

Step 4

Whisk the eggs thoroughly until smooth and well combined. You can use a fork or a whisk for a finer texture.

Step 4

Step 5

Heat a non-stick pan over medium-low heat. Pour in the whisked eggs. Using a spatula, gently stir the eggs in one direction, folding them over as they cook. Aim for soft, fluffy curds. It’s best to slightly undercook them as they will continue to cook from residual heat, ensuring a moist scramble.

Step 5

Step 6

Now, add the marinated onions to a pan over medium heat. Cook, stirring occasionally, for about 3-5 minutes, or until the liquid has reduced and the onions are tender and slightly translucent. Be careful not to overcook, as they can become mushy.

Step 6

Step 7

Prepare the konjac rice for 2 servings. You can heat it in the microwave according to package directions or simmer it on the stovetop. Konjac rice is a great low-calorie option for healthy eating.

Step 7

Step 8

Spoon the cooked konjac rice into a serving bowl. Top generously with the prepared pickled onions. Their sweet and tangy aroma will stimulate your appetite.
