A Special Rosé Tteokbokki Recipe Using King Oyster Mushrooms

I love rosé tteokbokki so much, but I often found it hard to digest due to the flour content. So, I decided to create a version using king oyster mushrooms instead of traditional rice cakes! King oyster mushrooms are larger and chewier than regular oyster mushrooms, making them twice as fun to eat. If you’re a fan of rosé tteokbokki but looking for a healthier option, I highly recommend giving this recipe a try!

Main Ingredients
  • King oyster mushrooms (or ‘Suntari’) 300g
  • Vienna sausages 100g
  • Cabbage 50g
  • Green onion 1/4 stalk
  • Parmesan cheese, a little (for garnish)

Rosé Sauce Seasoning
  • Fine gochugaru (Korean chili powder) 4 Tbsp
  • Granulated sugar 2 Tbsp
  • Soy sauce 1 Tbsp
  • Oyster sauce 0.5 Tbsp
  • Curry powder 1 Tbsp (for flavor boost!)
  • Ground black pepper 0.5 tsp
  • Dasida (or chicken stock) 0.5 tsp
  • Gochujang (Korean chili paste) 1.5 Tbsp (adds spiciness)
  • Minced garlic 1 Tbsp

Cooking Instructions

Step 1

First, prepare the star of our dish: 300g of king oyster mushrooms (also known as ‘Suntari’).

Step 2

Instead of traditional tteokbokki rice cakes, these chewy king oyster mushrooms will take their place. You’ll experience a different charm compared to regular rice cakes.

Step 3

Separate the mushroom caps individually. Rinse them thoroughly under running water to remove any dirt or debris.

Step 4

Next, get 100g of store-bought Vienna sausages ready. These are a crowd-pleaser, especially for kids!

Step 5

To help the sauce penetrate better, make a few cross-shaped cuts on the sausages. This also makes them look nice when cooked and absorb more flavor.

Step 6

Blanch the sausages in boiling water for about 1 minute. This step helps remove impurities from the surface, making them cleaner and more pleasant to eat.

Step 7

Cut 50g of cabbage into bite-sized square pieces.

Step 8

Now, let’s make the delicious rosé sauce! Start by adding 4 Tbsp of fine gochugaru (Korean chili powder) to a mixing bowl.

Add 2 Tbsp of granulated sugar for a touch of sweetness.

Step 10

Don’t forget 1 Tbsp of soy sauce for that savory umami flavor.

Add 0.5 Tbsp of oyster sauce for a deeper flavor profile.

For a unique aroma and taste, add 1 Tbsp of curry powder. This will elevate the charm of your rosé sauce!

Add 0.5 tsp of ground black pepper for a hint of warmth.

Include 0.5 tsp of Dasida (or chicken stock) to enhance the rich flavor.

For the spicy kick, add a generous 1.5 Tbsp of gochujang (Korean chili paste) – that’s one tablespoon plus a half!

Finally, stir in 1 Tbsp of minced garlic for a fragrant aroma.

Now, mix all the sauce ingredients thoroughly with a spoon. Letting the sauce rest for a bit will deepen its flavor.

Place the cleaned king oyster mushrooms in a preheated dry pan over medium-low heat, without any oil. Stir-fry until most of their moisture has evaporated. This process helps to firm up the mushrooms and enhance their chewy texture.

Step 19

Once the mushrooms have released most of their water, add the blanched Vienna sausages. Sauté them together. The sausages will absorb the mushroom’s flavor, making them even tastier.

Now, pour 1 cup (about 200ml) of water into the pan with the sautéed mushrooms and sausages.

Add 1 cup (about 200ml) of whole milk for a creamier rosé sauce. Be careful, as milk can boil over quickly.

Once the sauce starts to simmer, let it cook for about 2 more minutes. Then, add 2 Tbsp of the prepared rosé sauce mixture. (Adjust the amount to your preference).

Step 23

Continue to simmer for about 5 minutes, allowing the sauce to thicken and the flavors to meld. During this time, add the chopped cabbage. The cabbage will soften and add a subtle sweetness.

Finally, for an extra layer of savory richness, grate a little Parmesan cheese over the dish. This will double the deliciousness!
