Main Ingredients

  • 100g Barley Bibim Noodles (noodles with a lower glycemic impact)
  • 100g Cabbage (for crispiness and natural sweetness)
  • 1/3 Cucumber (for freshness and crunch)
  • 1 Hard-boiled Egg (for added protein)

Low-Sugar Bibim Sauce

  • 1 Tbsp Low-Sugar Gochujang (Korean chili paste, sugar-free)
  • 1 Tbsp Gochugaru (Korean chili flakes, adjust for spice)
  • 2 Tbsp Soy Sauce (for umami)
  • 1 Tbsp Vinegar (for tanginess)
  • 2 Tbsp Allulose (natural sweetener, sugar substitute)
  • 3 Tbsp Finely Chopped Kimchi (for fermented flavor)
  • 0.5 Tbsp Sesame Oil (for nutty aroma)

Optional Garnish (for Extra Flavor!)

  • A pinch of Toasted Sesame Seeds (for nutty flavor and visual appeal)

Cooking Instructions

Step 1

Wash the cucumber and cabbage thoroughly. Julienne them into very thin strips. The thinner the strips, the better they will absorb the sauce and taste.

Step 2

Bring a pot of water to a rolling boil. Add the barley bibim noodles and stir gently for 1-2 minutes to prevent sticking. Cook until the noodles are tender but still have a slight bite. Be careful not to overcook, as they can become mushy.

Step 3

In a bowl, combine the low-sugar gochujang, gochugaru, soy sauce, vinegar, allulose, finely chopped kimchi, and sesame oil. Whisk well with a spoon until all ingredients are evenly mixed and form a flavorful sauce. Ensure everything is thoroughly blended.

Step 4

Drain the cooked barley noodles and rinse them quickly under cold water to cool them down. Place the drained noodles and the julienned cabbage into a mixing bowl. Add the prepared bibim sauce and gently toss everything together with your hands until the noodles and vegetables are well coated. Mix gently to avoid breaking the noodles.

Step 5

Transfer the mixed bibim guksu to a serving bowl. Arrange the julienned cucumber and the hard-boiled egg on top. Finish with a sprinkle of toasted sesame seeds for added aroma and visual appeal. Enjoy your healthy and delicious Barley Noodle Bibim Guksu! 🙂
