Healthy Baguette Sandwich with Avocado Kale Latte

On this continuing cold snap, I made this homemade cafe-style healthy brunch for my daughter when she came home from school. Students these days have so much to worry about – career paths, friendships, and so much more. We had a wonderful, cozy time chatting at home, enjoying a brunch that rivaled any cafe. Ingredients

  • Kale (for juicing) 2 leaves
  • Almond milk or milk 3 cups
  • Mango 1
  • Avocado 1
  • Agave syrup, to taste
  • Baguette loaves 4
  • Paprika jam 4 Tbsp
  • Balsamic glaze, as needed
  • Cherry tomatoes 4

Seasoning

  • Coconut oil, as needed

Cooking Instructions

Step 1

First, wash the kale thoroughly. To prepare the avocado, cut it in half and gently twist to separate. To remove the pit, carefully tap the knife tip into it and twist. Ripe avocados can be easily peeled by hand. Peel the mango, remove the seed, and cut it into pieces. (If using a banana, a naturally ripened, browned one will add great flavor.)

Briefly steam the kale in a steamer basket over boiling water. Immediately rinse the steamed kale under cold water to cool it down. This helps maintain its vibrant green color and softens it perfectly.

Dice the avocado and mango into approximately 1.5cm cubes. (If using a banana, peel and cut it into similar-sized pieces.)

Combine the steamed kale, diced avocado, mango, and banana (if using) in a food processor. Blend until smooth, gradually adding the almond milk (or milk) until you reach your desired consistency. Sweeten with agave syrup to your preference.

Slice the baguette loaves into 1.5 to 2cm thick pieces. Heat a pan over medium heat and add a generous amount of coconut oil. Toast the baguette slices until golden brown and slightly crispy on both sides. This step adds a delightful crunch.

Pour the creamy avocado kale smoothie into serving glasses. It’s best enjoyed immediately.

Arrange the toasted baguette slices on a plate. Spread a generous layer of paprika jam onto each slice. Artfully arrange the thinly sliced avocado on top, followed by halved cherry tomatoes. Drizzle with balsamic glaze in a zigzag pattern and sprinkle with shredded coconut for added texture and flavor. Serve these delightful sandwiches alongside the prepared avocado kale smoothie.
