Ingredients- Tofu 250g (firm or regular)
- Carrot 1/3 medium (approx. 50g)
- Onion 1/2 medium (approx. 70g)
- Shiitake mushrooms 2 (fresh or dried)
- Salad greens 20g (e.g., lettuce, perilla leaves, to your preference)
- Salt a pinch (for seasoning)
Cooking Instructions
Step 1
First, it’s crucial to remove as much water from the tofu as possible. You can use a tofu press or wrap it in paper towels and place a weight on top for about 10-15 minutes. This ensures the tofu becomes crumbly and doesn’t mash when stir-fried.

Once the water is drained, mash the tofu. Use a fork or your hands to break it down into a fine, crumbly texture. This will give you a pleasant consistency when mixed with rice.

Now, let’s prepare the vegetables. Wash and peel the carrot and onion, then slice them thinly into matchsticks. For the shiitake mushrooms, if using fresh ones, remove the stems and slice them thinly. If using dried shiitake, rehydrate them in water until soft before slicing.
