This dish comes together quickly and is a fantastic choice for a healthy diet, with tofu being a nutritional powerhouse.   • 1 block firm tofu (260g)
  • A little perilla oil (Korean sesame oil)
  • Napa cabbage kimchi, to your liking

Heat a generous amount of perilla oil in a frying pan. Add the whole garlic cloves and sauté until fragrant. The rich aroma from the whole garlic is a key highlight of this dish! (Tip: Using whole garlic cloves instead of minced adds a nutty flavor and a pleasant chew. It’s not just because chopping is a hassle!)

Blanch the tofu in boiling water. Carefully immerse the tofu in the vigorously boiling water for about 20 seconds, then remove. This helps the tofu firm up and hold its shape better when stir-frying. (Tip: Using firm tofu intended for pan-frying will prevent it from breaking apart during cooking, ensuring a better texture.)

Now, let’s stir-fry the kimchi! Once the whole garlic cloves are lightly golden, add the chopped napa cabbage kimchi and stir-fry until it softens. If the kimchi seems a bit dry, add a little more perilla oil to enhance the flavor. (Tip: While canola or olive oil can be used, opting for healthy perilla oil adds a wonderful nutty aroma that complements the kimchi and tofu perfectly. Its unique fragrance truly elevates the dish.)
