Tossing Grilled Zucchini with a Fragrant Wild Chive Sauce

I made grilled zucchini salad with wild chives, a side dish my grandmother used to make. Last night, after making rolled omelets and kimchi stew, I pondered what to do with the zucchini. I quickly whipped up a wild chive dressing and tossed the zucchini with it.

Main Ingredients
  • 1 medium zucchini
  • A small piece of carrot
  • 1/4 small onion
  • A handful of wild chives
  • A little cooking oil

Cooking Instructions

Step 1

First, prepare the vegetables that will add flavor to the grilled zucchini salad. Wash the carrot, onion, and wild chives thoroughly and mince them into small, fine pieces. I used about 1/4 of a small onion and diced the carrot and wild chives in proportion to the onion. Finely mincing them helps the dressing coat the ingredients evenly, making it even more delicious.

Step 2

Let’s make a fragrant and delicious wild chive dressing! In a bowl, combine 4 tablespoons of soy sauce, 2 tablespoons of oligosaccharide, and 2 tablespoons of perilla oil, mixing well. Add 1 tablespoon of red chili flakes and finally, sprinkle in some toasted sesame seeds to create the basic dressing base. Taste and adjust the amount of soy sauce or oligosaccharide to your preference.

Step 3

Wash the zucchini and slice it into thick rounds, about 1 cm (approx. 0.4 inches) thick. I personally enjoy the slightly crisp bite of zucchini, so I tend to slice it thickly even when making pancakes. Slicing it thickly ensures it doesn’t become mushy after grilling and retains a pleasant texture.

Step 4

Lightly oil a pan and grill the zucchini slices until golden brown. If possible, using a grill pan will create attractive grill marks. You’ll notice that grilling enhances the natural sweetness of the zucchini. (Oops, a small part got a little burnt while I wasn’t looking, but it didn’t significantly affect the taste! Haha~)

Step 5

The grilled zucchini slices were quite large, so I cut them in half for easier eating. I briefly debated whether to cut them, but halving them made tossing with the dressing much simpler and easier to pick up with chopsticks.

Step 6

All preparations are now complete! Add the grilled zucchini to the bowl with the prepared wild chive dressing, along with the minced carrot, onion, and wild chives. Gently toss everything together to ensure the dressing coats the zucchini evenly. This grilled zucchini salad tossed with wild chive dressing is a true delicacy, combining its natural sweetness with the aromatic flavor of wild chives. It’s truly a rice thief!
