  • 4 Eggplants

  • 3 Tbsp Soy sauce
  • 1 Tbsp Corn syrup
  • 0.5 Tbsp Sugar
  • 0.5 Tbsp Minced garlic
  • 1 Tbsp Sesame oil
  • 3 Tbsp Gochugaru (Korean chili powder)
  • 1 Tbsp Toasted sesame seeds

Cooking Instructions

First, prepare the eggplants. Slice the eggplants into round pieces, about 1 to 1.5 cm thick. Round slices make them tender and help them absorb the seasoning well for a delicious taste.

Wash the zucchini thoroughly. Then, cut it into strips similar in thickness (about 1 cm) to the eggplant slices. If you slice them too thinly, they might break apart easily when sautéed, so maintaining a moderate thickness is recommended.

Heat a frying pan over medium heat and add a generous amount of cooking oil. It’s important to use enough oil so the ingredients sauté evenly without burning.

Adjust the heat to medium-high. Add both the sliced eggplant and zucchini to the pan and sauté them. Cook for about 3-4 minutes until the zucchini becomes slightly tender and wilted. Sautéing the eggplant alongside also helps achieve a soft texture.

Once the zucchini reaches your desired tenderness, turn off the heat. Now it’s time to make the delicious seasoning sauce. In a bowl, combine 3 Tbsp soy sauce, 1 Tbsp corn syrup, 0.5 Tbsp sugar, 0.5 Tbsp minced garlic, 1 Tbsp sesame oil, 3 Tbsp gochugaru, and 1 Tbsp toasted sesame seeds. Mix them well. (Tip: You can also prepare the sauce in advance.)
