Main Ingredients
  • 3 chicken breasts
  • 200ml milk

Spicy Marinade Ingredients
  • 3 green peppers (about 20g)
  • 5 cloves garlic
  • 3 Tbsp oligodang (Korean oligosaccharide syrup)
  • 3 Tbsp mozzarella cheese
  • 85g plain yogurt (1 cup)
  • 1 potato (medium-sized)

Cooking Instructions

Step 1

First, prepare your ingredients. Rinse the chicken breasts thoroughly. Then, soak them in 200ml of milk for about 15 minutes. Soaking in milk helps tenderize the chicken and removes any gamey odor.

Step 2

Peel the medium-sized potato and grate it finely using a grater. This grated potato will be added to the marinade to enhance flavor and provide a smooth texture.

Step 3

Wash the 3 green peppers and remove their stems. Peel the 5 cloves of garlic. Place both the green peppers and garlic in a blender and blend until smooth. This forms the base of your flavorful spicy sauce.

Step 4

In a bowl, combine the 85g of plain yogurt, the blended green pepper and garlic mixture, the grated potato, 3 tablespoons of oligodang, and 3 tablespoons of mozzarella cheese. Mix everything well until you have a delicious spicy marinade.

Step 5

Remove the chicken breasts from the milk and pat them dry with paper towels. Carefully make a lengthwise cut almost all the way through the chicken breasts, creating a pocket or allowing them to open wider. This ensures the marinade penetrates deeply and keeps the chicken moist.

Step 6

Spread about 1.5 tablespoons of the prepared spicy marinade inside the cut of each chicken breast. Then, fold the chicken breast back over to enclose the marinade. Ensure the marinade is well-contained.

Step 7

Preheat your oven to 250°C (480°F) for 2 minutes. Place the marinated chicken breasts in the preheated oven and bake for a total of 20 minutes. Adjust baking time as needed based on your oven’s performance. (This 20-minute duration includes preheating time).

Step 8

*The chicken should be cooked through and wonderfully tender by now. Check for a nicely browned exterior and moist interior.*

Step 9

Transfer the cooked chicken breasts from the oven to a frying pan. Heat the pan over medium heat and sear the chicken for about 1 minute on each side to develop a richer flavor and slightly crisp texture.

Step 10

Move the chicken to one side of the pan. Pour all the remaining spicy marinade sauce into the empty part of the pan. Reduce the heat to low and simmer the sauce, stirring occasionally, for about 4 minutes and 30 seconds, or until it thickens slightly. This will create a glossy coating for the chicken.
