Main Ingredients
  • 1/2 medium winter squash (about 500g)
  • 2 cups all-purpose flour (about 200g)
  • 1/2 cup potato starch (about 50g)
  • 1 tbsp salt
  • 2 tbsp sugar
  • 180ml water
  • Cooking oil (generous amount)

Cooking Instructions

Step 1

First, wash the winter squash thoroughly. Remove the stem, cut the squash in half, and scoop out the seeds and soft inner pulp with a spoon. Removing the seeds and the mushy parts will prevent excess moisture when frying, ensuring a neat finish.

Step 2

Using a mandoline slicer or a grater, thinly julienne the prepared winter squash. The thinner the shreds, the faster they will cook and the more tender the texture will be. Shredding them finely, almost like noodles, will make them even more delicious.

Step 3

To the thinly julienned squash, add 1 tablespoon of salt and mix well. Let it sit for about 5 minutes. This step helps to draw out excess moisture naturally, preventing the batter from becoming too watery, while enhancing the squash’s natural sweetness and infusing it with flavor.

Step 4

Once the squash has softened and released some moisture, add 2 cups of all-purpose flour, 1/2 cup of potato starch, and 2 tablespoons of sugar. Gradually add 180ml of water while mixing to create the batter. It’s important to adjust the consistency so it’s neither too thick nor too thin. The batter should be pourable, like a thick pancake batter, and smooth without any lumps.

Step 5

Heat a generous amount of cooking oil in a pan over medium-low heat. Ladle the batter into the hot pan, spreading it thinly. Fritters cooked thinly ensure even cooking and achieve that delightful texture of being crispy on the outside and soft on the inside. Cook slowly over medium-low heat.

Step 6

Once one side is golden brown, flip the fritter and cook the other side until it’s also golden brown and appetizing. They are ready when both sides have a beautiful golden-brown hue. Enjoy them warm right away to savor the freshly fried, savory, and sweet flavor of the winter squash fritters. These old-fashioned fritters, full of nostalgic flavor, are so delicious you won’t be able to stop at just one. Enjoy your time with these wonderful pumpkin fritters!
