Main Ingredients- Leftover chicken, appropriate amount
- 2 bowls warm cooked rice
- 7-8 whole cloves garlic
- 2 stalks celery
- 1 small onion
- 1 Tbsp olive oil
Seasoning- 1 Tbsp soy sauce
- 1 Tbsp oyster sauce
- Pinch of black pepper
- 1 Tbsp soy sauce
- 1 Tbsp oyster sauce
- Pinch of black pepper
Cooking Instructions
Step 1
Wearing gloves for hygiene, shred the leftover chicken into bite-sized pieces. If you don’t like the skin or find it too tough, feel free to remove it. This preparation ensures the chicken blends well with the rice in the fried rice.
Step 2
Thinly slice the whole garlic cloves. Finely dice the celery and onion. Celery adds a delightful crunch, and you can use other vegetables you have on hand (like carrots, bell peppers, etc.). Adding a variety of vegetables will create a richer flavor.
Step 3
Heat 1 Tbsp of olive oil in a wide pan over low heat. Add the sliced garlic first and sauté until fragrant, being careful not to burn it. The key is to gently cook the garlic until its aroma is released.
Step 4
Once the garlic is fragrant, add the diced onion and stir-fry until translucent. When the onion becomes transparent, add the diced celery. Continue to stir-fry over medium-low heat until the vegetables are slightly softened but still retain some crispness. Avoid overcooking, as this will make the vegetables lose their crunch.
Step 5
Add the shredded chicken to the pan and stir-fry with the vegetables. Since the chicken is already cooked, just sauté it enough to warm through and meld with the other ingredients. Overcooking will make the chicken dry and tough.
Step 6
Push the cooked chicken and vegetables to one side of the pan. In the empty space, pour in 1 Tbsp of soy sauce and 1 Tbsp of oyster sauce. Let the sauces simmer briefly, allowing them to caramelize slightly for a deeper flavor. Keep the heat at medium-low.
Step 7
Mix the simmering soy sauce and oyster sauce with the chicken and vegetables. Then, add 2 bowls of warm cooked rice. Stir well to ensure all ingredients are evenly coated with the sauce.
Step 8
Stir-fry over medium-low heat until the rice grains are separated and well combined with the other ingredients. Taste and add a pinch of salt if needed, according to your preference. Finally, sprinkle about 10 rounds of black pepper for aroma. Spread the fried rice evenly in the pan and let it sit over low heat to develop a slight crispy bottom before serving for an extra delicious touch.
