  • 1 can (200g) Spam Classic
  • 4 fresh eggs
  • 1 medium onion
  • A sprinkle of roasted seaweed flakes (kim)

  • 6 Tbsp soy sauce (jin-ganjang)

Cooking Instructions

Step 1

First, dice the canned Spam into approximately 1cm cubes for easy eating. Heat a non-stick pan over medium heat, then add the diced Spam. Cook until all sides are golden brown and slightly crispy, without adding any oil. This step enhances the Spam’s savory flavor.

Step 2

In a bowl, crack the 4 fresh eggs and whisk them thoroughly with a fork or whisk to break up the egg whites. You can use the same pan you used for the Spam, but reduce the heat to low. Pour the whisked eggs into the pan. Continuously stir the eggs with chopsticks or a spatula, keeping the heat very low, to create soft scrambled eggs. Cooking slowly over low heat is key for a tender texture.

Step 3

For the onion, use one medium-sized onion (about the size of a billiard ball). If you don’t have enough onion or want to experiment, thinly sliced green onions can also add a unique flavor twist! Thinly slice the onion into strips and place it in a pan. Add 6 Tbsp of soy sauce and 3 Tbsp of sugar, mix well, and then simmer over medium-low heat until the onions are translucent and the sweet aroma is released. Stir occasionally to prevent burning.

Now, place 2 bowls of warm cooked rice into your serving bowls. Spoon half of the simmered sweet onions over the rice, spreading them evenly. The sweetness of the onions will blend beautifully with the rice, creating a rich umami flavor.
