Main Ingredients

  • Richem or your favorite canned luncheon meat, 200g
  • 1/4 onion
  • 1/2 stalk green onion
  • 1 egg
  • 2 Tbsp cooking oil
  • 1 bowl of warm cooked rice (approx. 210g)
  • Pinch of black pepper

Flavorful Rice Bowl Sauce

  • 3 Tbsp soy sauce
  • 100ml water
  • 1/2 Tbsp sugar
  • 1 Tbsp cooking wine (mirin, etc.)
  • 1/2 Tbsp minced garlic

Cooking Instructions

First, slice the Richem (or your chosen canned ham) into bite-sized pieces. Slicing them about 0.5 cm thick works best, as they might fall apart if too thin.

Wash the onion thoroughly, then slice it into thin strips, similar in length to the ham slices. Thinly sliced onions will cook more evenly with the ham.

Wash and finely chop the green onion. You can use both the white and green parts. If you prefer a bit more texture, chopping it slightly thicker is also fine.

In a small bowl, combine 3 Tbsp soy sauce, 100ml water, 1/2 Tbsp sugar, 1 Tbsp cooking wine, and 1/2 Tbsp minced garlic. Stir well until the sugar dissolves to create the delicious rice bowl sauce. Set aside.

Crack 1 egg into a separate bowl. Add a pinch of black pepper and gently whisk it with a fork or chopsticks until just combined. Avoid over-whisking.

Heat 2 Tbsp of cooking oil in a frying pan over medium heat. Add the sliced onion and chopped green onion, and sauté until fragrant, about until the onion becomes translucent.

Once the onions are softened, add the sliced Richem to the pan and stir-fry together. This step will add a nice sear and flavor to the ham.

Pour the prepared rice bowl sauce over the ham and vegetables. Bring to a simmer over medium-low heat and let it cook until the sauce thickens and coats the ingredients nicely. Allow it to reduce slightly.

When the sauce has reduced, gently pour the whisked egg mixture around the edges of the pan. As the egg begins to set, gently stir it with chopsticks to create soft scrambled egg pieces, mixing them with the ham and vegetables. Be careful not to overcook the egg.
