Gourmet Bulgogi Pizza
[Holiday Food Hack] Transform Leftover Marinated Galbi or Bulgogi into Delicious Pizza (Perfect for Pizza & Beer)
Do you often have leftover marinated bulgogi or galbi from holiday feasts? Don’t worry! You can transform these delicious leftovers into a fantastic ‘Bulgogi Pizza’. It’s a quick and easy way to create a brand new dish, perfect for parties or special occasions. I made this with leftover bulgogi from a housewarming party, and it was incredibly delicious! I’m sharing it again as the holiday season approaches.^^
Essential Ingredients- 1 Tortilla or pizza dough
- 100g Leftover marinated bulgogi or galbi
- 100g Cocktail shrimp (optional)
- 20g Butter (approx. 1 Tbsp)
- 1/8 Onion
- 1/2 Tbsp Minced garlic
- 5 Tbsp Spaghetti sauce
- 200g Mozzarella cheese
- Pinch of salt
- Pinch of black pepper
Cooking Instructions
Step 1
First, prepare about 1 tablespoon of butter. This will be used to sauté the shrimp and vegetables. You can use any remaining butter for other dishes.
Step 2
While cocktail shrimp are optional, adding them makes this homemade pizza even more decadent than store-bought versions. I used a handful of frozen shrimp from my freezer for a richer taste. Enjoy an even more abundant pizza!

Slice the onion thinly. This will be easier to manage as a pizza topping.
Step 4
Melt the prepared butter in a pan over medium heat. Add the minced garlic and sauté until fragrant. Be careful not to burn the garlic, as this will affect the flavor.
Step 5
Add the cocktail shrimp to the pan with the fragrant garlic butter and sauté until they turn pink and are cooked through.
Step 6
Season the shrimp with a pinch of salt and black pepper while cooking. This enhances their natural flavor. Your shrimp are now ready!
Step 7
Remove the cooked shrimp from the pan and set aside. In the remaining butter and oil in the pan, sauté the remaining vegetables, excluding the onion. I used enoki mushrooms that were part of the bulgogi prep, red and green chili peppers, and even some crown daisy left from a seafood stew. Feel free to use any leftover vegetables you have in your fridge!

Now, for the star ingredient: the marinated bulgogi (or galbi). Add only the meat to the pan without any extra oil. Cook until the moisture has evaporated and the meat is slightly crispy. Stir-fry over medium-low heat to prevent the marinade from burning.
Step 9
Lay the tortilla flat on a baking pan or oven-safe dish. If you’re using pizza dough, spread it out evenly to fit your pan.
Step 10
Spread the spaghetti sauce evenly over the tortilla, like applying lotion. Avoid using too much sauce, as it can make the pizza soggy. A thin, even layer is best.
Step 11
First, sprinkle the thinly sliced onions evenly over the sauce. The onions will soften and add a touch of sweetness as they cook.
Step 12
Arrange the sautéed vegetables attractively on top of the onions. This adds color and layers of flavor.
Step 13
Generously top the pizza with the cooked bulgogi (or galbi) and the sautéed shrimp. Don’t be shy with the toppings for a truly satisfying pizza!

Sprinkle a generous amount of mozzarella cheese over all the toppings. Cheese is essential for a great pizza!

I used two different types of leftover mozzarella cheese for this pizza, mixing them together. A pizza is best when the cheese stretches wonderfully, so don’t hold back! Plenty of cheese will elevate the flavor profile of your pizza.
Step 16
Bake in a preheated oven at 200°C (400°F) for 10 to 12 minutes, or until the cheese is melted and bubbly and the crust is golden and crisp. Keep an eye on it, especially if using a quick-melting cheese like angel hair mozzarella, as it can burn easily. Baking time may vary depending on your oven.
Step 17
Once baked to perfection, remove the pizza from the oven and cut it into desired portions. Enjoy your delicious homemade pizza while it’s hot!^^
