Easy & Delicious Bulgogi Beef Inari Sushi & Rice Balls – Perfect Lunchbox Idea!
Elevate your usual Inari sushi by adding stir-fried ground beef seasoned with a savory bulgogi sauce. This creates a much richer flavor and aroma, transforming it into a sophisticated beef Inari sushi. This dish is a consistent favorite for my kids, making it a go-to item for family picnic lunchboxes. The sweet and savory soy sauce-based bulgogi marinade is well-absorbed by the ground beef. After stir-frying, you can mix it with the rice using a small amount of the seasoning from a store-bought Inari sushi kit. You can either fill the seasoned rice into the tofu pouches for sushi, or shape the remaining rice into bite-sized rice balls. These make a wonderful picnic treat that stays delicious even when cold. They are easier to prepare than kimbap and packed with nutritious beef, making them an excellent, simple lunchbox option. This recipe shows you how to make delicious beef Inari sushi using a convenient store-bought kit, enriching the taste and nutrition.
Main Ingredients- 300g Ground Beef
- 2 Tbsp Cooking Oil
- 1 set Store-bought Inari Sushi Kit (approx. 200g)
- 0.5 packet Sushi Seasoning Mix (from kit)
Beef Bulgogi Marinade- 3 Tbsp Soy Sauce
- 1.5 Tbsp Sugar
- 3 Tbsp Minced Scallions (white parts preferred)
- 0.5 Tbsp Minced Garlic
- 1 Tbsp Sesame Oil
- 1 Tbsp Cooking Wine (Mirin)
- Pinch of Black Pepper
- 3 Tbsp Soy Sauce
- 1.5 Tbsp Sugar
- 3 Tbsp Minced Scallions (white parts preferred)
- 0.5 Tbsp Minced Garlic
- 1 Tbsp Sesame Oil
- 1 Tbsp Cooking Wine (Mirin)
- Pinch of Black Pepper
Cooking Instructions
Step 1
Finely mince the white parts of the scallions, about 5cm in length. These minced scallions will add flavor and help remove any gamey smell from the beef.
Step 2
Pat the ground beef dry with paper towels to remove excess blood. Removing the blood is crucial for a clean, un-gamey flavor.
Step 3
In a bowl, combine the drained ground beef with the marinade ingredients: 3 Tbsp soy sauce, 1.5 Tbsp sugar, 3 Tbsp minced scallions, 0.5 Tbsp minced garlic, 1 Tbsp sesame oil, 1 Tbsp cooking wine, and a pinch of black pepper. Add all the measured marinade ingredients.
Step 4
Gently mix the marinade into the beef with your hands until well combined. For best results, let it marinate in the refrigerator for about 1 hour. However, if you’re short on time, you can proceed to cooking immediately.

Heat 2 Tbsp of cooking oil in a pan over medium heat. Ensure the pan is adequately oiled to prevent the beef from sticking.

Once the oil is hot, add the marinated ground beef to the pan and begin to stir-fry.

Cook the beef over medium-high heat, breaking up any clumps with chopsticks or a spatula. Continue to stir-fry until the moisture has evaporated and the beef is crumbly and well-cooked. Ensuring the beef is thoroughly cooked and dry prevents the sushi from becoming soggy.

Place about 3 bowls of cooked rice in a large mixing bowl. Add the entire packet of sushi seasoning powder from the Inari sushi kit, but use only half of the liquid sauce. Since the beef is already seasoned, reduce the amount of liquid sauce to control the overall saltiness.

The recipe uses a generous 300g of stir-fried beef. If you find this ratio too meaty, feel free to increase the amount of rice to balance it out. Adjust the rice-to-beef ratio according to your preference.

Gently mix the rice, sushi seasoning, and stir-fried beef together with your hands until everything is evenly combined. Be careful not to mash the rice grains.

Finally, drizzle about 2 Tbsp of sesame oil over the mixture and sprinkle with toasted sesame seeds for an added nutty aroma. This enhances the overall flavor.

We’ll be using the Inari tofu pouches from the kit (enough for 2 servings) to make the Inari sushi. The remaining rice will be shaped into rice balls. If you prefer to make all Inari sushi, you can either prepare more tofu pouches or reduce the amount of rice used. Feel free to customize.

Gently open each Inari tofu pouch and firmly stuff it with the seasoned beef and rice mixture using a spoon. This completes your delicious beef Inari sushi.
