Essential Ingredients- 200g boneless, skin-on chicken thighs
- 2 medium potatoes
- 1/3 medium carrot
- 2 shiitake mushrooms
- 3 Tbsp cornstarch
- 1 bowl cooked rice
- A little cooking oil
- A little sesame oil
- A pinch of salt
- A pinch of black pepper
Soy Braising Sauce Ingredients- 3 Tbsp soy sauce
- 2 Tbsp cooking sake (mirin or similar)
- 1 Tbsp sugar
- 2 cups (approx. 400ml) kelp or dashi stock
- 3 Tbsp soy sauce
- 2 Tbsp cooking sake (mirin or similar)

Cooking Instructions
Step 1
First, prepare the vegetables. Wash the potatoes and carrot thoroughly, then cut them into large 3cm cubes. Remove the stems from the fresh shiitake mushrooms and cut them into thirds.
Step 2
Cut the chicken thighs into bite-sized pieces. Sprinkle a little cooking sake over the chicken to remove any gamey smell, then season lightly with salt and pepper. Coat the seasoned chicken thighs evenly with cornstarch. This coating will help create a crispy exterior and allow the sauce to absorb beautifully.
Step 3
Heat a pan with a generous amount of cooking oil over medium heat. Place the chicken thighs skin-side down and sear until golden brown. Once nicely browned, cut them into bite-sized pieces. Pre-searing the chicken like this locks in the juices, making it extra delicious.
