Main Ingredients- Well-fermented Kimchi 1/4 head (approx. 200g)
- Canned Ham 1 can (approx. 200g)
- Seasoned Seaweed Sheets 2 packs
Seasoning & Others- Gochugaru (Korean chili powder) 2 Tbsp

- Umami Seasoning (e.g., Dashida) 0.5 Tbsp
- Soy Sauce 1 Tbsp
- Sesame Oil 2 Tbsp

Cooking Instructions
Step 1
First, finely chop the kimchi into bite-sized pieces (about 0.5cm). Dice the canned ham into small cubes as well. This ensures the ham and kimchi mix well when stir-fried.
Step 2
In a large bowl, combine the gochugaru (2 Tbsp), sugar (1 Tbsp), umami seasoning (0.5 Tbsp), and a pinch of black pepper (adjust or omit to your preference). Mix thoroughly to create the seasoning paste. This prevents clumping and helps the seasoning distribute evenly.
Step 3
Heat 1 Tbsp of sesame oil in a pan over medium heat. Add the chopped kimchi and stir-fry it first. This process helps to bring out the kimchi’s tangy flavor and aroma.
Step 4
After stir-frying the kimchi for about 3 minutes until it softens slightly and becomes fragrant, add the diced canned ham and cook together. Once the ham is partially cooked, add the prepared seasoning paste (gochugaru, sugar, umami seasoning, pepper mix) and stir-fry everything until well combined and the seasoning coats the ingredients.
Step 5
Now it’s time to add the rice. I used about 2.5 servings of instant rice (210g each). If you’re using freshly cooked rice, use about two to three scoops from a rice cooker. Break up any clumps of rice with your spatula and stir-fry until the rice is thoroughly mixed with the kimchi and ham.
Step 6
Once the rice is well incorporated with the seasoning, add 1 Tbsp of soy sauce along the edge of the pan and let it sizzle slightly; this enhances the flavor. Stir everything together once the soy sauce aroma is released. Turn off the heat and drizzle in the remaining 1 Tbsp of sesame oil for a glossy finish and a smooth texture.
