Main Ingredients
- 1 bunch of scallions (or about 2 handfuls)
Golden Ratio Seasoning (using a standard cup for measurement)
- 1.5 cups pear drink
- 1.5 cups anchovy sauce
- 2 cups gochugaru (Korean chili flakes)
- 0.5 cup plum extract
- 0.3 cup corn syrup
- 0.5 cup toasted sesame seeds
- 1.5 cups pear drink
- 1.5 cups anchovy sauce
- 2 cups gochugaru (Korean chili flakes)
- 0.5 cup plum extract
- 0.3 cup corn syrup
- 0.5 cup toasted sesame seeds
Cooking Instructions
Step 1
Prepare about 1 bunch (or roughly 2 handfuls) of fresh scallions. Wash them thoroughly under running water to remove any dirt or debris, then gently pat them dry.
Step 2
Let’s make the seasoning that defines the kimchi’s flavor! In a bowl, combine the pear drink, anchovy sauce, gochugaru, plum extract, and corn syrup. Mix all the seasoning ingredients except the sesame seeds until well combined, using a whisk or a spoon. It’s important to ensure the ingredients are smoothly incorporated.
Step 3
Gradually add the prepared seasoning mixture to the washed scallions, gently tossing them. Be careful not to mix too vigorously, as this can bruise the scallions.
Step 4
Ensure the seasoning coats every part of the scallions evenly. Take care to coat the white parts as well as the green leaves, making sure the seasoning is thoroughly absorbed for a more flavorful result.
Step 5
Once the scallions are well-coated with the seasoning, sprinkle in the toasted sesame seeds. Give it one last gentle toss to mix. Your delicious scallion kimchi is now ready! You can enjoy it immediately, or let it ferment for an even deeper flavor.
