  • 1 Tbsp oligosaccharide (or corn syrup)
  • 1 Tbsp sesame seeds (whole)
  • Sugar to taste (adjust as needed)

Choose well-fermented, sour kimchi for the best flavor. First, rinse the kimchi thoroughly under running water several times to remove excess spiciness and saltiness. Then, soak the kimchi in water for at least 30 minutes to mellow out its sourness and saltiness. This step is crucial for the seasoning to penetrate well and create a deeper flavor.

After soaking for about 30 minutes, squeeze out as much water as possible from the kimchi. Excess water can make the stir-fried kimchi soggy. Cut the kimchi into bite-sized pieces, about 2-3 cm long.
