The key to a great Kimchi Pancake is its crispiness! To make it extra crispy and delicious, we’ll use a 1:1 ratio of pancake mix and all-purpose flour. While using only pancake mix is tasty, combining it with all-purpose flour will give you a much richer flavor and a satisfyingly crunchy texture.

Thinly slice the onion. In a mixing bowl, combine the pancake mix and all-purpose flour. Add 1 teaspoon of sugar and a pinch of salt. (Adjust the salt based on the kimchi’s saltiness.) Gradually add the 1 cup of water while whisking until smooth, ensuring there are no lumps. If the batter seems too thick, add a little more water; if it’s too thin, add a bit more flour until you achieve your desired consistency. (It should be slightly thinner than pancake batter.)
