  • 1 large white part of scallion
  • 100ml cooking oil

Main Ingredients: Spam Kimchi Fried Rice
  • 1/2 small can Spam
  • 7 Vienna sausages
  • 1/4 head well-fermented kimchi
  • 1 ladle kimchi juice
  • 1 Tbsp tuna extract (or soy sauce)
  • 1 Tbsp ginger syrup or corn syrup
  • 2 bowls of cooked rice (preferably slightly cooled)
  • 2 slices cheese
  • 2 eggs

Cooking Instructions

Step 1

First, let’s make the star of our delicious fried rice: the scallion oil. Prepare the white parts of the scallions and finely chop them. The finer the chop, the more flavor will infuse into the oil.

In a pot or pan, combine the chopped scallions and 100ml of cooking oil. Heat over medium-low heat. Initially, stir gently to ensure the scallions are submerged in the oil. Once the scallions start to soften, reduce the heat to low and let it simmer. You’ll notice a subtle, deep scallion aroma as the oil gently bubbles.

Step 3

Allow the scallions to turn golden brown without burning, infusing the oil with their fragrant essence. Once you can smell the wonderful aroma, your flavorful scallion oil is ready! This homemade scallion oil is versatile and can be used in many other dishes.

Strain the scallion oil, separating the crispy fried scallion bits (scallion flakes) from the oil. Set aside the oil for later use, and keep the fried scallion bits to add texture and flavor to the fried rice.

In the wok or pan you’ll use for the fried rice, leave the crispy fried scallion flakes and about 1-2 tablespoons of the reserved scallion oil.

After mixing the rice and kimchi, add the ladle of kimchi juice, 1 tablespoon of tuna extract (or soy sauce), and 1 tablespoon of ginger syrup (or corn syrup). Stir-fry until all the seasonings are evenly distributed and coat each grain of rice. Taste and adjust seasoning if needed, adding a bit more tuna extract or soy sauce if it’s not salty enough.

Now, let’s make a delicious fried egg! Prepare another clean pan and add about one tablespoon of scallion oil (or regular cooking oil if preferred). Heat the pan gently.
