Main Ingredients
  • Well-fermented Kimchi: 1 handful (approx. 1.5 cups)
  • Onion: 1/2 medium (approx. 70g)
  • Bell Pepper: 1 (using various colors adds visual appeal, approx. 50g)
  • Pork (shoulder or belly recommended): 100g
  • Cheddar Cheese Slices: 2 slices
  • Sesame Oil: 1 Tbsp
  • Warm Cooked Rice: 2 bowls (approx. 400g)

Cooking Instructions

Step 1

Prepare the onion to enhance the flavor of your kimchi fried rice. Finely mince 1/2 an onion. Heat a pan over medium heat and add 1 Tbsp of sesame oil. Once fragrant, add the minced onion and sauté for about 2 minutes until translucent, releasing its aroma.

Step 2

Now it’s time to cook the pork. Cut 100g of pork into bite-sized pieces (about 1-2 cm). Add it to the pan with the onions and stir-fry. Cook until the pork is mostly cooked through and the surface turns white. The rendered pork fat will mix with the kimchi, adding a delicious depth of flavor.

Step 3

The star of kimchi fried rice: let’s stir-fry the kimchi. Prepare 1 handful (about 1.5 cups) of kimchi and chop it finely. Once the pork is almost cooked, add the chopped kimchi and stir-fry for about 3-4 minutes until the kimchi softens and is well combined with the seasoning. If the kimchi is too sour, you can add 1/2 tsp of sugar while stir-frying.

Step 4

Add the bell pepper for color and texture. Remove the seeds from 1 bell pepper and dice it finely. Once the kimchi is sufficiently stir-fried, add the diced bell pepper and cook together for about 1 minute. Stir-fry briefly to maintain the crisp texture of the bell pepper; avoid overcooking it.

Step 5

Now, add the rice and stir-fry until all ingredients are well combined. Add 2 bowls of warm cooked rice to the pan. Use a spatula to break up any clumps of rice and gently mix everything together with the kimchi, vegetables, and pork for about 2 minutes. Ensure each grain of rice is coated with the seasoning.

Step 6

Transfer the delicious kimchi fried rice to a serving bowl. Finally, top the kimchi fried rice with 2 slices of cheddar cheese as desired. The melting cheese will make the fried rice even creamier and more savory. Enjoy immediately once the cheese has slightly melted!
