Making the Perfect Pickled Onions with a Golden Ratio
Hello everyone! This is Wonschelin Guide. Today’s recipe is! Pickled onions made with a golden ratio. This is incredibly simple but 100% practical, and it’s one of my favorite side dishes.
Ingredients- 3 medium onions
- 1 cup soy sauce
- 1/2 cup vinegar
- 1 cup sugar
- 6 chili peppers (adjust to your spice preference, e.g., green chilies for heat, red chilies for color)
- 1+1/2 cups water
Cooking Instructions
Step 1
First, we’ll prepare the pickling brine. In a pot, measure and add 1 cup of sugar. You can adjust the sweetness to your liking.

Next, add 1/2 cup of vinegar. Vinegar helps maintain the onions’ crispiness and adds a delightful tang.
Step 3
Add 1 cup of soy sauce. Using regular soy sauce will enhance the umami flavor.
Step 4
Finally, pour in 1+1/2 cups of water. The amount of water is crucial for achieving the right brine consistency.
Step 5
Now, combine all the brine ingredients in the pot and bring to a boil over medium heat. While it’s heating up, let’s prepare the onions and chilies.

Peel the onions, wash them thoroughly, and then cut them into quarters or bite-sized pieces. Trim the stems off the chilies and slice them diagonally. Place the prepared onions and chilies into a heat-sterilized glass jar.

Once the brine in the pot begins to boil, continue simmering it for about 5 more minutes. This step helps the flavors meld and improves preservation. Turn off the heat just as the brine is vigorously boiling. Immediately pour the hot brine over the onions and chilies in the jar. Pouring while hot is key to keeping the onions crisp!

After pouring the brine, gently press down on the onions with a spoon or spatula to ensure they are fully submerged. Give it a gentle stir to distribute the brine evenly.

Since we poured hot brine, let the jar cool down at room temperature for a while before refrigerating. Once completely cooled, seal the lid and store it in the refrigerator. You can enjoy the delicious, well-matured pickled onions starting from the next day!

Always store the finished pickled onions in the refrigerator. This will keep them fresh and flavorful for a longer period.
