Main Ingredients- Pork neck 370g (other cuts like pork belly or shoulder can be used depending on preference)
- Soy sauce 35ml (approx. 3.5 Tbsp)
- Sugar 30g (approx. 2 Tbsp)
- Oyster sauce 2/3 Tbsp (approx. 10ml)
- Cooking wine (like Mirin) 1 Tbsp (approx. 15ml)
- Minced garlic 2/3 Tbsp (approx. 10g)
- Finely grated onion 3 Tbsp (approx. 30g)
- Pear juice (store-bought pear drink) 1/2 cup (approx. 100ml)
- Sesame oil 1 Tbsp (approx. 15ml)
Cooking Instructions
Step 1
First, prepare the pork for the ribs. This recipe uses pork neck (370g), but you can also use tender pork belly or fatty shoulder for a delicious result. Lightly rinse the meat under running water and pat it dry with paper towels.
Step 2
Now, let’s make the key to delicious pork ribs: the homemade marinade. In a bowl, combine 35ml soy sauce, 30g sugar, 2/3 Tbsp oyster sauce, 1 Tbsp cooking wine, 2/3 Tbsp minced garlic, and 1 Tbsp sesame oil for a nutty aroma.
Step 3
Add ingredients to further enhance the marinade’s flavor. Mix in 3 Tbsp of finely grated onion and pour in half a cup (approx. 100ml) of pear juice. Pear tenderizes the meat and adds a subtle sweetness. Stir everything well with a whisk or spoon until fully combined.
Step 4
Pour the prepared marinade over the pork neck. Use your hands or tongs to ensure the marinade coats every piece of meat evenly. It’s important to have the meat coated uniformly.
Step 5
Marinate the pork in the refrigerator for at least 4 hours. For an even richer flavor, marinate it overnight. This allows the marinade to deeply penetrate the meat. Flipping the meat halfway through the marinating time helps distribute the flavor evenly.
Step 6
Now it’s time to cook. Heat a pan over medium-low heat, rather than high heat. Instead of pouring all the marinade at once, add it little by little as the meat cooks. This prevents the marinade from burning and keeps the ribs moist!
Step 7
Once the meat is golden brown, cut it into bite-sized pieces. Continue to cook, allowing the cut sides to absorb the sauce and develop more flavor. Flip the pieces occasionally to ensure even cooking.
Step 8
Your delicious homemade marinated pork ribs, with their perfect sweet and savory balance, are ready! They are especially wonderful served with a warm bowl of rice. Enjoy a fantastic pork rib dish easily at home!
