Marinade Ingredients

  • Gochujang (Korean chili paste) 2 Tbsp
  • Gochugaru (Korean chili flakes) 1 Tbsp
  • Jin Ganjang (Korean soy sauce) 1 Tbsp
  • Sugar 1/2 Tbsp
  • Minced garlic 1 Tbsp
  • Grated pear 1 Tbsp (use freshly grated pear)
  • Chicken broth 100ml (or water)

Cooking Instructions

Step 1

Begin by placing the gochujang and gochugaru into a mixing bowl. Whisk or stir them together until the gochujang’s paste-like texture becomes smooth and well-combined, ensuring there are no lumps. This step helps to create a consistent base for the marinade.

Step 2

Once the gochujang and gochugaru are smoothly incorporated, add all the remaining ingredients except for the chicken broth: jin ganjang, sugar, minced garlic, and grated pear. Mix thoroughly until all ingredients are well combined and the mixture becomes quite thick, with minimal liquid visible. Achieving this thick consistency is key at this stage.

Step 3

Now, it’s time to incorporate the chicken broth. Gradually pour in the chicken broth while gently stirring the mixture. Continue to stir slowly and steadily until the marinade is fully dissolved and reaches a smooth, flowing consistency. The goal is to achieve a perfectly smooth, lump-free marinade.

Step 4

Once the marinade is ready, it can be used to marinate your pork immediately. Coat the pork pieces evenly with the marinade. For the best flavor development, refrigerate the marinated pork for at least 30 minutes. Adjust the marinating time according to your preference for a deeper taste.
