  • 2 Mini Bell Peppers (use various colors for a vibrant look!)
  • 1/2 Onion (small size)

First, drain the canned sweet corn thoroughly using a sieve. Place all the drained corn into a large mixing bowl. Draining the corn well prevents the salad from becoming watery and allows the dressing to be absorbed better!

Wash the mini bell peppers under running water. Remove the stems, seeds, and the white inner pith. Finely dice them into small pieces, similar in size to the corn kernels. Do the same for the onion: peel it and dice it finely to match the size of the other ingredients. If they’re too large, they can be difficult to eat.
