For Boiling the Chicken- 4 Scallion Roots
- 3 Bay Leaves
- 1 tsp Whole Peppercorns
- 3 Liters Water
Cooking Instructions
Step 1
First, prepare the broth to remove any gamey smell from the chicken and make it tender. Add 3 liters of water to a pot, along with 4 scallion roots, 3 bay leaves, and 1 tsp of whole peppercorns. These ingredients will effectively remove any unwanted odors from the chicken.
Step 2
Once the prepared broth is boiling vigorously over high heat, add all 20 cleaned chicken drumsticks. The water level might momentarily drop before boiling again.
Step 3
When the water returns to a rolling boil, reduce the heat to medium. Cover the pot and let the chicken simmer until completely cooked through, about 20-25 minutes. Ensure it’s cooked all the way to the bone.
Step 4
Once the chicken is fully cooked, remove the drumsticks from the pot and place them in a colander to drain. Let them cool slightly before proceeding. While the chicken cools, you can prepare the next steps.
Step 5
Now, it’s time to coat the chicken for a crispy finish. Place 5 Tbsp of potato starch in a resealable plastic bag. Add the slightly cooled chicken drumsticks and shake the bag thoroughly to coat each piece evenly. Gently tap off any excess starch for an extra crispy texture.
Step 6
Heat 2 Tbsp of cooking oil and 1 Tbsp of sesame oil in a pan over medium-low heat. Add 3 Tbsp of minced garlic and the finely chopped white parts of 1 large scallion. Sauté until fragrant and slightly golden, creating a flavorful garlic and scallion oil. Be careful not to burn the garlic.
Step 7
Once the aromatics are fragrant, add all the sauce ingredients to the pan: 10 Tbsp soy sauce, 3 Tbsp rice wine, 2 Tbsp hot sauce, 4 Tbsp corn syrup, 2 Tbsp plum extract, 1 tsp black pepper, and 1 cup (200ml) of water. Stir everything together well. Bring the sauce to a boil.
Step 8
When the sauce starts bubbling, add all the coated chicken drumsticks. Reduce the heat to medium-low. Gently toss or shake the pan to ensure the sauce coats the chicken evenly. Continue to simmer and let the sauce thicken until it clings beautifully to the chicken, resulting in a glossy and delicious Soy Garlic Chicken. Enjoy!
