First, separate the egg yolks from the whites and set the yolks aside. Place the egg yolks into a bowl of warm cooked rice. Using chopsticks or a spatula, gently mix the yolks into the rice until each grain is coated. Ensure the rice doesn’t clump together by mixing softly. Tip: Using cooled, leftover rice will result in a chewier, more distinct texture when fried. Feel free to use warm or cold rice according to your preference.

Finely chop the green onion. The thinner the slices, the more effectively its aroma will infuse into the fried rice when cooked. This step is key to releasing its full flavor.

Heat a frying pan over medium heat and add 2-3 tablespoons of cooking oil. Once the oil is shimmering, add the chopped green onions. Sauté them over medium heat until they are lightly golden brown and fragrant. Cook them until a pleasant aroma begins to fill your kitchen.

When the green onions are nicely fragrant, add the egg-yolk-coated rice and 1/2 teaspoon of salt to the pan. Increase the heat slightly to medium-high.
