  • 1/2 Tbsp sugar
  • Pinch of salt
  • 1 Tbsp mayonnaise
  • 1 cup mozzarella cheese
  • 1 slice processed cheese
  • 20g butter, softened or melted
  • 2 slices bread

First, thoroughly drain the canned corn by placing it in a sieve. In a bowl, combine the drained corn, 1/2 tablespoon of sugar, a pinch of salt, 1 tablespoon of mayonnaise, and 1 cup of mozzarella cheese. Mix everything well with a fork or spatula until you have a delicious corn cheese filling.

Prepare your two slices of bread. Gently melt the 20g of butter in the microwave for about 20-30 seconds, or let it soften at room temperature. Spread this softened or melted butter thinly and evenly on one side of each slice of bread. This is the side that will be grilled, ensuring a wonderfully crispy exterior.

Now, let’s assemble the toast. Lay the two slices of bread flat, with the buttered sides facing down (these will form the outside of the toast). Place one slice of processed cheese on one of the bread slices. If desired, add two slices of ham on top of the cheese. Generously spoon the prepared corn cheese filling over the ham and cheese. Finally, place the second slice of bread on top to complete the sandwich.

Carefully place the assembled toast into a frying pan, ensuring the buttered side is against the pan for optimal crisping. Place a heavy lid, such as a cast-iron pot lid, on top of the toast to press it down firmly. Reduce the heat to the lowest setting. Let it cook slowly for 3 minutes. (Tip: If you don’t have a heavy lid, you can cover the toast with parchment paper and then place heavy pots or plates on top to apply pressure.)

Once flipped, place the heavy lid back on top and continue to cook for another 3 minutes on low heat. Cook until both sides are a beautiful golden brown, achieving that perfect crispy exterior and tender interior.
