Wash the potato thoroughly. You can leave the peel on or remove it. Using a mandoline slicer or a peeler, slice the potato as thinly as possible. Slicing thinly while maintaining the potato’s shape is key to achieving crispiness.

Place the sliced potatoes in cold water and rinse them several times to remove excess starch. Continue rinsing until the water runs clear. This step prevents the chips from sticking together and ensures a crispier result.

Gently pat the rinsed potato slices completely dry with paper towels or a clean kitchen towel. Excess moisture can cause splattering oil and lead to soggy chips, so drying them thoroughly is crucial.
