Golden Butter-Grilled Squid

  • 1 semi-dried squid (choose a fresh, plump one)
  • 1/2 Tbsp butter (to add a subtle, rich flavor)
  • 1/2 Tbsp sugar (for a final touch of caramelization)

Spicy Cheongyang Mayo Soy Sauce

  • 2 Tbsp mayonnaise (the creamy base of our sauce)
  • 1/2 Tbsp regular soy sauce (for depth of flavor)
  • 1/2 Cheongyang chili pepper (or more, if you love the heat!)

Cooking Instructions

First, prepare your semi-dried squid. Gently rinse 1 semi-dried squid under cool running water. Then, pat it thoroughly dry with clean kitchen towels. Ensuring the squid is well-dried is key to achieving a crispier texture when grilled.

Finely mince the Cheongyang chili pepper for the sauce. You can adjust the amount based on your spice preference. You don’t necessarily need to remove the seeds, but if you prefer less heat, remove them before mincing.

Now, let’s make the delicious sauce! In a small bowl, combine 2 Tbsp of mayonnaise, the finely minced Cheongyang chili pepper, and 1/2 Tbsp of regular soy sauce. Whisk everything together until well combined. Using a small whisk or spoon will help create a smoother sauce.

Separate the body and tentacles of the prepared squid using scissors. Next, make 2-3 shallow cuts, about 1cm deep, along both ends of the squid’s body with your scissors. These cuts will help the squid uncurl attractively as it cooks and allow the flavors to penetrate better.

Melt 1/2 Tbsp of good quality butter in a heated pan over medium heat. Let the butter melt slowly, releasing its fragrant aroma. Be mindful of the heat to prevent the butter from burning.

Once the butter is fully melted, reduce the heat to medium-low. Place the prepared squid in the pan. Grill for about 2-3 minutes per side, flipping occasionally, until the squid is lightly golden brown and looks appetizing. Adjust the cooking time based on the thickness and your desired doneness.

When the squid is almost fully cooked, sprinkle 0.5 Tbsp of sugar evenly over both sides. The sugar will melt and lightly caramelize, adding a wonderful sweetness and a beautiful golden hue. Grill for another minute or so after adding the sugar. Your flavorful butter-grilled squid is now ready to be enjoyed with the spicy Cheongyang mayo soy sauce – a perfect snack!
