Ingredients- 2 Tbsp butter
- 2 Tbsp all-purpose flour
- 1 cup milk (200ml)
- 2 Tbsp heavy cream
- 5-6 Tbsp canned corn kernels, drained
- 2 Tbsp corn liquid from the can
- 3-4 Tbsp sugar (adjust to taste)
- 2 pinches salt
- 2 pinches black pepper
- 20-30g mozzarella cheese
- Pinch of dried parsley for garnish
Cooking Instructions
Step 1
Melt the 2 tablespoons of butter in a pan over medium-low heat. Be careful not to let it brown; you want it to melt gently.
Step 2
Once the butter is completely melted, turn off the heat. Immediately add the 2 tablespoons of flour. Whisk briskly to combine.
Step 3
Whisk the butter and flour together until smooth and lump-free. Cook for about 1 minute, stirring constantly, until fragrant. This creates a smooth roux, which will thicken your sauce. The mixture might look a bit thin, which is perfect.
Step 4
Gradually add the 1 cup (200ml) of milk, a little at a time, while whisking continuously. Adding the milk in stages is crucial to prevent lumps from forming and ensure a silky smooth sauce.
Step 5
Don’t worry if you see small lumps forming initially as you add the milk. Just keep whisking vigorously. The lumps will smooth out as you continue to add the milk and stir.
Step 6
As you continue to whisk and add the milk, the mixture will transform into a smooth, creamy white sauce base without any lumps. This gradual addition technique guarantees a lump-free sauce.
Step 7
Pour in the 2 tablespoons of heavy cream into the smooth white sauce. The heavy cream will add an extra layer of richness and velvety texture.
Step 8
Return the pan to medium-low heat. Stir the sauce constantly as it gently simmers and thickens to a consistency similar to that of a creamy soup. Continuous stirring prevents the sauce from sticking to the bottom of the pan.
Step 9
Once the sauce has reached a creamy, soup-like consistency, add the drained canned corn kernels (5-6 Tbsp) and the reserved corn liquid (2 Tbsp). The corn liquid adds an extra boost of corn flavor.
Step 10
Stir everything together gently with a spatula, ensuring the corn kernels are evenly distributed throughout the sauce. Be careful not to mash the corn.
Step 11
Season the mixture with 3-4 tablespoons of sugar, 2 pinches of salt, and 2 pinches of pepper. Adjust the sweetness according to your preference and the natural sweetness of the corn. (Pro Tip: If you blend this mixture in a food processor at this stage, you’ll get a delicious creamy corn soup!)
Step 12
Add half of the mozzarella cheese (20-30g) to the corn mixture and stir until it begins to melt and incorporate into the sauce. This adds a wonderful cheesy element.
Step 13
Sprinkle the remaining mozzarella cheese evenly over the top. You can then place the dish under a broiler or in an oven/air fryer for a few minutes until the cheese is melted and golden brown. (Note: You can mix all the cheese in, or just sprinkle it on top. If you don’t have cheese, the corn dish is still delicious on its own!)
Step 14
Garnish with a pinch of dried parsley for a beautiful finish. Serve immediately while warm for the best taste. Enjoy your delicious homemade corn cheese!
