How to Make Delicious Corn Cheese with Boiled Corn Kernels

We made a healthy and even more flavorful corn cheese using boiled corn kernels. This recipe is perfect for a delightful snack or a savory side dish.

Ingredients
  • 1 bowl boiled corn kernels (approx. 150g)
  • 2 Tbsp mayonnaise
  • 1 handful shredded mozzarella cheese (approx. 50g)

Cooking Instructions

Step 1

First, let’s prepare the corn kernels. Wash the corn kernels thoroughly under running water. Place the corn kernels in a pot and add enough water to cover them completely. Adding a pinch of salt at this stage will subtly season the corn, making it even tastier. Bring the water to a boil over medium heat, then reduce to low-medium heat and simmer for about 10-15 minutes, or until the corn kernels are tender. You can test for doneness by piercing with a fork; it should go in easily. Once cooked, drain the corn kernels thoroughly in a colander. Do not rinse them under cold water, as this can wash away their natural sweetness.

Step 2

Boil the corn kernels with a little salt. (This step seems to overlap with the draining instruction in the previous step. It could be merged or clarified further. If kept separate, you could specify: ‘Boiling Corn: In a pot, combine corn kernels, water to cover, and a pinch of salt. Bring to a boil over high heat, then reduce to medium-low and simmer for 10-15 minutes until tender.’)

Step 3

Once cooked to your desired texture, drain the kernels in a sieve and do not rinse them. (This step is already detailed in the first step. If kept, it can be a brief reminder: ‘Drain the well-cooked corn kernels thoroughly in a sieve. Avoid rinsing to preserve the sweetness.’)

Step 4

To the drained, warm corn kernels, add 1 tablespoon of sugar for sweetness. If you prefer a sweeter taste, you can add the full tablespoon from the start. Alternatively, like I did, you can add half first and then add the remaining half after tasting to adjust. I initially added only half to enjoy the corn’s natural sweetness, then added more later to reach a total of 1 tablespoon, which was perfect.

Step 5

Next, add 2 tablespoons of mayonnaise for a rich and creamy flavor. The amount of mayonnaise can be adjusted to your preference, but 2 tablespoons generally provide a good balance and enhance the corn’s taste.

Step 6

Using a spatula or spoon, gently mix the corn, sugar, and mayonnaise together until well combined. Ensure that each corn kernel is evenly coated with the dressing.

Step 7

Now, it’s time to cook! Heat a non-stick pan over low heat. Add the mixed corn and stir-fry for about 1-2 minutes until the mayonnaise is lightly cooked and releases a fragrant aroma. The mayonnaise acts as a cooking oil, preventing the corn from burning and giving it a light golden hue. Once the corn is lightly sautéed, spread it evenly across the pan.

Step 8

After spreading the corn evenly, generously sprinkle your desired amount of shredded mozzarella cheese over the top. Add more cheese if you love it, or a moderate amount as shown in the picture if you prefer.

Step 9

This is the final step! Cover the pan with a lid and cook over very low heat for about 3-5 minutes, or until the cheese is completely melted and the bottom of the corn mixture is slightly golden and crispy. It’s crucial to keep the heat very low to prevent the cheese from burning. Once the cheese is beautifully melted, your delicious corn cheese is ready!

Step 10

Serve your homemade corn cheese immediately while it’s warm! The slightly caramelized cheese at the bottom of the pan creates a wonderful crispy crust, much like a ‘nurungji’ (scorched rice crust). The combination of sweet corn, creamy mayonnaise, and stretchy cheese is truly delightful. It’s best enjoyed fresh right out of the pan!
