  • 1 can (drained) sweet corn
  • 10 Tbsp mayonnaise (approx. 70g)
  • 2 tsp sugar
  • Mozzarella cheese (to your liking)

Advanced Version: Rich & Flavorful Cheese Corn
  • 1 can (drained) sweet corn
  • 2 slices cheddar cheese (finely chopped or torn)
  • Mozzarella cheese (to your liking)
  • 2 Tbsp carrot (finely diced)
  • 2 Tbsp onion (finely diced)
  • 10 Tbsp mayonnaise
  • 2 tsp sugar
  • 1/3 tsp black pepper

Cooking Instructions

Step 1

For the advanced version featuring vegetables, finely dice the carrots and onions to about 0.3-0.5 cm in size. Avoid dicing them too finely; a slight bite will enhance the texture. You can also add about 2 Tbsp of finely chopped bell peppers or green peppers for extra color and flavor.

Step 2

Drain the canned sweet corn thoroughly using a sieve. Excess water can dilute the flavor and make the corn mushy, so be sure to drain it well.

Step 3

In a bowl, combine the drained sweet corn, diced carrots and onion (if using the advanced version), mayonnaise, sugar, and black pepper (if using the advanced version). Gently mix everything together, being careful not to crush the corn kernels. Ensure all ingredients are evenly distributed.

Step 4

Transfer the well-mixed corn mixture to an oven-safe dish and top with cheese for baking. Baking in the oven yields a wonderfully golden and flavorful topping. However, if you don’t have an oven or prefer a simpler method, a frying pan is a practical alternative, especially for camping or outdoor cooking where an oven might not be available.

Step 5

While mozzarella cheese alone is delicious, today we’ll add 2 slices of cheddar cheese from the fridge for a richer, more complex flavor. The savory and intense taste of cheddar cheese will elevate the corn cheese to another level. Combining different cheeses can create a uniquely delightful taste.

Step 6

Generously cover the corn mixture with mozzarella cheese. You can use sliced mozzarella or shredded pizza mozzarella cheese. Enough cheese to cover the surface is sufficient, but feel free to add more if you love that stretchy, gooey cheese pull, just like I do!

Step 7

Place the frying pan over a stove burner and heat on a very low setting. It’s crucial to maintain a ‘low heat’ throughout the cooking process. Cook gently until the mozzarella cheese is melted. If you’ve used a lot of cheese or want it to melt faster, you can cover the pan loosely with a lid to help trap steam. Be mindful not to cover it for too long, as the bottom might burn while the cheese melts.

Step 8

This is the most agonizingly delightful moment – the sizzling sound and the intoxicating aroma of melting cheese! You’ll be impatiently waiting for the cheese to melt, but the anticipation is part of the pleasure. Just a little longer until the cheese is perfectly gooey. The rich cheesy scent is enough to drive you wild with happiness.
