Potatoes are in season from June to September! We’ve made delicious rest stop style potatoes using fresh, newly harvested potatoes. They’re perfect as a nutritious snack for kids.

Main Ingredients

  • 5 medium-sized potatoes (approx. 740g)
  • 2 Tbsp butter

Seasoning

  • 2 Tbsp sugar
  • 1 tsp salt

Cooking Instructions

Prepare 5 medium-sized fresh potatoes. (Total weight approximately 740g)

Wash the potatoes thoroughly with their skins on. Place the washed potatoes in a microwave-safe dish. Cover with a lid that allows steam to escape (like a vented lid or plastic wrap poked with holes). Microwave on high for 12 minutes.

Check for doneness by inserting a fork into a potato; it should slide in easily. If not fully cooked, microwave for an additional 1-2 minutes.

Carefully remove the hot potatoes from the microwave and let them cool slightly. Once cool enough to handle, peel the skins and cut each potato into four equal wedges.

Melt 2 tablespoons of butter in a frying pan over medium heat. Add the potato wedges to the melted butter. Gently toss the potatoes with a wooden spoon or spatula to coat them evenly with butter, taking care not to break them. Spread the potatoes out in a single layer in the pan. Cook until golden brown, flipping them only once or twice during cooking to prevent them from falling apart. Over-stirring can cause the potatoes to crumble.

Once the potatoes are nicely browned all over, sprinkle 1 teaspoon of salt and 2 tablespoons of sugar evenly over them.

Gently toss the potatoes for about 30 seconds to a minute over medium-high heat until the sugar melts and coats the potatoes, creating a glossy finish. Be careful not to burn the sugar.
