  • 1/2 Onion, finely diced
  • 1/2 can Sweet Corn (approx. 150g), drained well
  • 2 Tbsp Unsalted Butter (approx. 30g)
  • 1 Tbsp Granulated Sugar (approx. 15g)
  • 2 Tbsp Mayonnaise (approx. 30g)
  • Shredded Mozzarella or Cheddar Cheese (to taste)

Cooking Instructions

Step 1

First, prepare half an onion. Wash it thoroughly, peel off the skin, and dice it very finely. The smaller the dice, the softer the texture will be.

Step 2

We’ll be using about half a can (approx. 150g) of sweet corn. Drain the corn from the can using a sieve, ensuring all excess water is removed. Remaining moisture can make the mixture soggy when sautéed.

Step 3

Melt 2 tablespoons of unsalted butter in a pan over medium-low heat. Butter can burn easily, so pay close attention to the heat. Melt it until it’s fragrant and golden, but not browned.

Step 4

Once the butter is fully melted, add the drained sweet corn and the finely diced onion to the pan. Sauté them together, stirring continuously with a spatula, until the onions become translucent and any moisture has evaporated. This step is crucial for a good texture.

Step 5

After sautéing the corn and onions, add 1 tablespoon of granulated sugar. Continue stirring for another 1-2 minutes until the sugar dissolves and creates a slight glaze. This caramelization adds a delicious sweetness.

Step 6

Turn off the heat and let the pan cool slightly. Then, stir in 2 tablespoons of mayonnaise until everything is evenly coated. The residual heat will help the mayonnaise meld beautifully with the warm ingredients.

Now it’s time for the cheese! Any good melting cheese will work, but I used Havarti because its wide surface area makes it easy to cover the pan. Mozzarella or cheddar are also excellent choices. Use as much cheese as you like!

Place the pan back over very low heat. Evenly spread the shredded cheese over the corn mixture. Cover the pan with a lid and let it cook for 2-3 minutes, allowing the cheese to melt into a gooey layer without burning.

Once the cheese is completely melted and looks deliciously bubbly, immediately turn off the heat. Be careful not to overcook, as the cheese can become tough.
