Cooking Instructions

Step 1

First, wash the potatoes thoroughly and peel them with a peeler. Slice them lengthwise into strips about 0.3cm thick, not too thin. Rinse the julienned potatoes lightly in cold water once or twice to remove excess starch, then drain them well in a colander. This step prevents the potatoes from sticking together and ensures a cleaner stir-fry. Julienne the carrot and onion into similar lengths and thicknesses.

Step 2

Now, prepare your stir-frying pan. Heat the pan over medium-low heat, add 1-2 tablespoons of cooking oil. Add minced garlic and chopped green onions (optional, but adds great aroma!). Stir-fry gently over medium-low heat, being careful not to burn the garlic and onions, until a fragrant aroma is released, creating a garlic and onion-infused oil. This process deeply infuses the oil with flavor, significantly enhancing the taste of the potato stir-fry.

Step 3

Once the aromatic oil is ready, add the julienned potatoes and carrots to the pan and stir-fry. Cook for about 2-3 minutes, allowing the potatoes to absorb some oil. Then, add the sliced onions and continue to stir-fry until the potatoes and onions become slightly translucent. Moisture will start to release from the vegetables.

Step 4

To ensure the potatoes cook evenly and become tender without burning, add 1 tablespoon of water around the edges of the pan. Cover the pan with a lid and let it steam over medium-low heat for about 1-2 minutes. This steaming process will add moisture, making the potatoes wonderfully tender and soft.

Step 5

Remove the lid and check if the potatoes are almost cooked. Season with 1/2 tablespoon of baked salt and a pinch of black pepper. Adjust the salt to your preference. Stir everything together evenly and continue to cook for about another minute. Finally, turn off the heat, drizzle with 1/2 tablespoon of sesame oil or perilla oil, and sprinkle with toasted sesame seeds. Quickly toss everything together one last time using the residual heat to finish. You’ll have a delicious potato stir-fry with a wonderfully nutty aroma! It’s great served immediately or cooled and stored for later.
