These American waffles are delightful when topped with apple jam and a dollop of butter cream (or fresh cream)! The batter itself has a subtle sweetness, so if you prefer a sweeter taste, feel free to add a little more sugar. *Makes about 7 waffles (14cm diameter).

Waffle Batter Ingredients

  • 6g baking powder (ensure it’s fresh for maximum lift)
  • 60g granulated sugar (increase to 70-80g for a sweeter waffle)
  • 2g salt (enhances all the flavors)
  • 2 large fresh eggs (at room temperature)
  • 200g milk (slightly warmed for better mixing)
  • 1 tsp vanilla extract (for a lovely aroma and flavor)
  • 60g vegetable oil (or 60g melted unsalted butter)

In a large bowl, sift the cake flour and baking powder twice. This process ensures a light and airy batter. Add the granulated sugar and salt, then gently whisk them together with a whisk or spatula.

In a separate bowl, crack the two eggs and pour in the 200g of milk. Whisk them together until well combined. Gently warming the milk can help the oil or butter incorporate more smoothly later.

Gradually pour the egg and milk mixture into the bowl with the dry ingredients, whisking constantly to prevent lumps. It’s important to mix from the edges towards the center until just combined; overmixing can lead to tough waffles. Stop as soon as you no longer see streaks of flour.

Finally, add the 1 tsp of vanilla extract and 60g of vegetable oil (or melted butter). Whisk gently until the batter is smooth and uniform. The oil or butter will contribute to a wonderfully moist and rich waffle.

Batter is ready! This will make approximately 7 waffles. You can use it immediately, or for an even better texture, let it rest in the refrigerator for about 30 minutes.
