Essential Ingredients- Pork belly or sliced pork 120g (cut into bite-sized pieces)
- Finely chopped kimchi 1/2 paper cup (use fermented kimchi for extra flavor)
- Short-grain rice 1 paper cup (wash rice and soak for about 1 hour)
- Shiitake mushrooms 2 (wash and thinly julienne)
- Carrot 1/4 (wash and thinly julienne)
- Salt to taste (for marinating pork)
- Pepper to taste (for marinating pork)
- Water 1 paper cup (adjust according to your rice cooker)
- Cheongju (Korean rice wine) 1 Tbsp (to remove pork odor)
- Sesame oil 1/2 Tbsp (for aroma and flavor)
Sauce Ingredients- Finely chopped green onion 1 Tbsp
- Minced garlic 1/2 Tbsp
- Toasted sesame seeds 1 Tbsp
- Gochugaru (Korean chili flakes) 1 Tbsp
- Soy sauce 2 Tbsp
- Soup soy sauce (Guk-ganjang) 2 Tbsp
- Finely chopped Cheongyang pepper 1 (add more if you like it spicy)
- Finely chopped green onion 1 Tbsp
- Minced garlic 1/2 Tbsp
- Toasted sesame seeds 1 Tbsp
- Gochugaru (Korean chili flakes) 1 Tbsp
- Soy sauce 2 Tbsp
- Soup soy sauce (Guk-ganjang) 2 Tbsp
- Finely chopped Cheongyang pepper 1 (add more if you like it spicy)
Cooking Instructions
Step 1
First, cut the pork belly into bite-sized pieces. Marinate the pork pieces with a pinch of salt and pepper. Wash the shiitake mushrooms and carrot, then julienne them thinly. Prepare all your vegetables.

Step 2
Rinse the short-grain rice thoroughly and then soak it in water for about 1 hour. Soaking the rice beforehand will help it cook up fluffy and delicious.

Step 3
In a pressure cooker or electric rice cooker, add the soaked rice. Pour in 1 Tbsp of cheongju and 1 paper cup of water. Arrange the marinated pork, julienned shiitake mushrooms, carrot, and chopped kimchi on top. Cook the rice as you normally would.

While the rice is cooking, let’s make the delicious sauce! In a small bowl, combine the finely chopped green onion, minced garlic, toasted sesame seeds, gochugaru, 2 Tbsp of soy sauce, 2 Tbsp of soup soy sauce, and the chopped Cheongyang pepper. Mix everything well until thoroughly combined. Feel free to add more chili pepper if you prefer a spicier kick!
