We’ve rolled it with chewy glass noodles for a satisfying alternative to rice. It’s perfect as a snack or a side dish for dinner. Main Ingredients- 100g glass noodles (dangmyeon)
- 1 bowl cooked spinach
- Pinch of coarse salt (for blanching spinach)
- 3 cups water (for boiling noodles)
- 3 Tbsp soy sauce (for boiling noodles)
Seasoning- 2 Tbsp sesame oil
- 2 Tbsp toasted sesame seeds, ground
- 1/3 tsp fine salt (for seasoning spinach)

Cooking Instructions
Step 1
Soak the glass noodles in cold water for at least 1 hour (or until fully softened). This ensures they cook up to a wonderfully chewy texture.
Step 2
Trim the roots off the spinach and discard any yellow or wilted leaves. Bring 3 cups of water to a boil in a pot. Add a pinch of coarse salt. Blanch the spinach for about 30-40 seconds until it turns bright green and slightly tender. This quick blanching keeps the spinach vibrant and crisp.
Step 3
Immediately rinse the blanched spinach under cold running water 3-4 times to stop the cooking process and cool it down. Drain the spinach thoroughly in a colander.
Step 4
Gently squeeze out any excess water from the spinach. Finely grind 2 tablespoons of toasted sesame seeds using a mortar and pestle or a rolling pin until fragrant.
Step 5
In a pot, combine 3 cups of water and 3 tablespoons of soy sauce. Bring to a boil. Add the soaked glass noodles and cook for about 5-7 minutes, or until the noodles are translucent and tender yet chewy. Drain the cooked noodles well in a colander.

While the noodles are still warm, toss them with 1 tablespoon of sesame oil to prevent sticking and ensure even coating. In a separate bowl, season the spinach with the remaining 1 tablespoon of sesame oil and 1/3 teaspoon of fine salt, mixing gently.

Once the noodles have cooled slightly to a warm temperature (comfortable to touch), add the ground sesame seeds and toss everything together thoroughly. Gently combine the seasoned noodles and spinach, ensuring they are well mixed.
Step 8
Take a few strands of glass noodles and a small bunch of spinach. Carefully arrange them together and roll them up tightly. You can adjust the size according to your preference. Using chopsticks can help create neat rolls.
Step 9
